Thanks to The Ivesters for telling us about this recipe from A Taste of Heaven published in 2003 by Christ the King School, Atlanta:
- 2 eggs, slightly beaten
- 1 and ½ cups milk
- ¼ c oil
- 2 Tablespoons grated orange rind
- ¼ cup orange juice
- 2 cups pancake mix
Orange Sauce:
- 2 Tablespoons sugar
- 1/3 cup orange juice
- grated orange rind
- 1/3 cup melted butter
In a large mixing bowl, combine eggs, milk, oil, orange rind and orange juice. Add pancake mix. Stir until smooth. Preheat skillet or griddle. Pour batter and bake (cook) until bubbles break and edges are cooked. Turn and bake on other side. Serve with orange sauce. Makes 14 pancakes. Yields 6-8 servings.
In saucepan blend together all ingredients for orange sauce and heat until hot.
